The USDA's Team Nutrition initiative joins the celebration of Hispanic Heritage Month, which began on September 15 and ends on October 15. Together, let's celebrate the pioneers of change who exemplify the spirit, creativity, and unity that defines Hispanic heritage. Many Hispanics and Latinos work to shape USDA's future, proving healthy and nutritious meals through the Child Nutrition Programs in schools, child care sites, and summer meal sites.

Spotlight Healthy Meals Incentive Recognition Awardee – Antilles Consolidated School System in Puerto Rico

Mashed Cassava

Schools from Antilles Consolidated School System (ACSS) in Fort Buchanan, Puerto Rico are providing healthy meals to their students by using fresh protein foods, vegetables, and fruits. The meals are prepared from scratch with flavors added with herbs and natural spices, especially cilantro and coriander to bring out the Latin flavor. Students enjoy eating cultural dishes like mashed cassava and ripe plantains. Their modified breakfast menus include yogurts and cereals lower in added sugars and unflavored milk.

For these efforts and more ACSS received six out of the eight Healthy Meals Incentives Recognition Awards:
