Steadfast for Breakfast

Breakfast is an egg and a piece of toast or an English muffin. However, when visiting my favorite diner, biscuits and cream gravy or grits are my top picks to accompany my usual eggs. Homestyle breakfast for the win!

I try to eat healthy, so my usual morning lineup alternates between oatmeal and fruit, eggs with turkey or veggie sausage, and a protein shake. Occasionally, I'll give in and make homemade waffles for my kids, which I can never resist. We do breakfast for dinner at our house a few times a month—makes dinnertime easy and the kids love it!

I'm fulfilling a 2023 goal by eating an avocado a day, paired with a protein shake. The list of nutrients and vitamins for this superfood makes a whole paragraph. It also contributes to several great food combinations. I typically eat my avocado straight from the skin, though. Pro tip: you can indeed refrigerate avocados, but let them ripen a bit to finger-touch softness before doing so.

My usual breakfast is an avocado smashed with lime juice and a touch of salt, spread on whole wheat toast. I also enjoy a small bowl of blueberries and bananas topped with overnight oats. Most importantly, every morning starts with coffee!
