SMSgt Stephanie Keating
Services Superintendent, 109th Airlift Wing, Stratton Air National Guard
I was born in Tampa, Florida, raised in upstate New York, and live and breathe all things to do with the Adirondack Mountains, outdoors, food, food blogs, podcasts, books, fires, fired wood, and maple everything! If I did not work full time for the military, I would most likely be a health inspector (food safety—my jam).
“I truly believe the military nutrition environment is important and needs to be a focus! You eat well, you feel well.” |
My team and I are slowly revamping food service operations, starting with introducing new G4G coded-menus and fresher options (including vegan and vegetarian options). We typically cook during drill weekends (feeding up to 250 people 2 times a month). |
Outside units frequently comment on our amazing 13+ topping salad bar; however, we want to take it to the next level. We aim to have 15+ Green-coded toppings and are slowly starting to make our own dressing from scratch. |
"Serve nutrient-dense options/unique menu items. Not everyone will accept, but over time, I think you will notice a change in diet behaviors."
A special thanks to SrA Michael Demps for his expertise during this transformative time. He strives to bring more “culture to the kitchen” and challenges fellow Airmen to try new foods from different cultures. He brings his creativity to the kitchen and is helping the 109th cook up tasty works of art! |
