 Talking Turkey
When preparing a turkey, whether roasting or deep frying, proper cooking safety is essential to ensure a safe and enjoyable meal. If roasting, thaw the turkey in the refrigerator, in cold water, or in the microwave—never at room temperature—to prevent bacterial growth. Always wash your hands, utensils, and surfaces thoroughly after handling raw turkey to avoid cross-contamination. Use a food thermometer to ensure the turkey reaches an internal temperature of 165°F (74°C) in the thickest part of the breast and thigh.
If deep frying, take extra precautions by frying outdoors on a flat, stable surface, away from flammable materials. Ensure the turkey is completely thawed and dry to prevent dangerous oil splatters. Use a fryer with a thermostat to maintain oil temperature at 350°F (175°C) and lower the turkey slowly using protective gloves and tools. Keep a grease-rated fire extinguisher nearby, as water should never be used on an oil fire. Regardless of your cooking method, refrigerate leftovers promptly to avoid foodborne illnesses. With these safety tips, your turkey preparation can be both safe and delicious.
