But that's not the only good news... We know you loved the Traveling Barnyard every first Saturday of the month, so now we are looking to expand our kid activities at the market by kicking off our Little Sprouts program! Every second Saturday of the month, we will be offering a different free activity for the kids; from coloring pages, seed planting, to creating their own bird feeders!
OH SNAP! Before we forget, our supplemental nutrition programs are expanding! We will now be offering DOUBLE UP OKLAHOMA (AKA DUO) this year! This program provides EBT recipients up to $20 a day to spend on fresh fruits and vegetables!
Our Senior Farmers Market Nutrition Program is now accepting applications! This program provides qualifying seniors with a $50 card to spend on fresh fruits and vegetables! You can apply online at https://oklac.org/ebt. You may also stop by the Rose District Farmers Market booth at the Senior Health and Resource Fair on April 28th at Central Park Community Center or call our Farmers Market Facilitator at 918-259-7000 ext 7421!

Jamey is a Broken Arrow local! He has been seen around the market jamming on his piano, belting Elton John classics on Saturday, Saturday, Saturday(pun intended)!
Performances start at 9AM and continue until noon!

HEALING GREENS
About 45 minutes South-East of Broken Arrow, tucked between Wagoner & Tahlequah is the quaint town of Hulbert Oklahoma. At the edge of town is a beautiful 47-acre farm run by the Yang family. They have 6, 33-foot by 99-foot green houses, 3 of which are brimming with veggies and plant starts to bring to the market. They also have several plowed plots that they transfer and plant in when our Oklahoma weather is cooperative. The 3-generation farm is primarily run by Amy and her daughter, Mary & Son, Koo. For the past 2 years they have cultivated the land, built up their green houses and have created enough product to join the Rose District Farmers Market! They also have a full brood of chickens, geese, and pigeons, as well as a few pigs that Amy says are just for fun! The coops have towering poles covered with netting to prevent the hawks from making away with their prey. This is their first year with the market and you can recognize them in how their booth is brimming from on top the table to under the tables with large healthy plant starts as well as fresh veggies from their farm to your table! The booth, neighboring Down on the Farm, is usually run by all involved making it a fun family affair every Saturday with plans to possibly join us on Tuesdays!

Orval’s Organics Farm
Out in rural Claremore, on a 76-acre family farm, 3 siblings work the land & you know them as Orval’s Organics. Brooks, Olivia & Miles Willhoite are all proud to work the land that has been in their family since the 1930s putting the land in the family for nearly a century, since their Great Grandfather Orval purchased it! While Olivia & Miles both live & work full time jobs in Tulsa, Brooks lives at the front of the property & works the farm full time with assistance from his siblings on weekends & any other time they can. Miles stated that he already has his eye on a piece of the property in back to eventually build & live on as well.
Currently the farmland being worked is about ¼ acre, with two, 14’x50’ tunnels & is based on 30” beds & 18” pathways with crop rotation to keep the soil healthy for best plant growth possible. While currently working about ¼ acre of the land the siblings are definitely looking to expand not only the size of the farmed area but the plants they cultivate as well. They not only have the beautiful veggies you see weekly at their booth but also grow trees straight off their land. They also have plans to expand into animal farming as well, starting with chickens and cows, working up to a full-fledged working farm!
While they are not yet organically certified, they do follow organic practices. Their irrigation comes from a large 3-acre pond on the property that was formed when the land was originally mined for coal & a natural spring was struck. The water is clear & beautiful, providing irrigation for the farm as well as good fishing (& I’m sure a spot to cool off at in the heat of summer). The rock that the pond is set in is a shale limestone that Brooks says they grind into a fine power & mix with water to water their tomatoes with for the trace minerals. They have conducted experiments with the tomato plants, watering some just with water & others with the ground shale water & have seen amazing growth results from the trace minerals.
Brooks says part of their goal is “How to create a robust food system that is self-reliant & people being reliant on each other & not having to go to big stores for foods from out of state or country.” He goes on to state that “people are paying on the back end by eating trash food with no nutrition,” to which they hope to locally remedy with their produce which “is totally absent of synthetic chemicals but here we are trying to prioritize soil health & biology & create the most nutritious plant to help people be as vibrant & healthy as possible.” All 3 siblings agree that their favorite part of the market is connecting with people & being able to provide the best possible nutritious foods that they can grow!

Recipe Corner
There is nothing like hand-picking your fresh locally grown produce to create vibrant home cooked meals.
Here in the Recipe Corner, we would like to make it a little easier to cook through the seasons!
ONIE PROJECT-CROCKPOT CHICKEN TACOS
Time: 10 minutes Servings: 12
Ingredients:
- Non-stick cooking spray
- 2 lbs boneless, skinless chicken breasts
- 2 Tbsp ONIE Homemade Taco Seasoning
- 1 (16 oz) jar chunky salsa
- 2 (15.5 oz) cans no-salt-added black beans, drained & rinsed
- 1 (4 oz) can diced green chilies
- 2 cups frozen corn
- 2 large bell peppers, diced
- 1 large yellow onion, diced
- 24 corn tortillas
- 1 cup queso fresco
- 1/2 cup fresh cilantro, minced
Directions:

- Lightly coat the slow cooker with cooking spray. Place chicken on the bottom. Add taco seasoning, salsa, beans, chilies, corn, peppers & onion in the slow cooker. Mix well. Cook on LOW 8 hours or HIGH 4 hours, or until chicken is cooked through.
- Transfer chicken to a cutting board. Use two forks to finely shred chicken, then return to slow cooker. Mix well.
- Microwave tortillas 30 seconds, or until soft. Fill with chicken mixture & top with queso fresco & cilantro.
Tips
- Top with plain non-fat Greek yogurt for a tangy sour cream-like twist.
- Try our Chunky Homemade Salsa for an extra kick without the added sodium.
