McCoy’s Meadow is a small dairy goat farm located in Bixby, OK. Though they were first established in 2019, this is only their fourth year to be participating at the Rose District Farmers Market. Simone was raised in Broken Arrow and says that it is honestly a dream come true to be a vendor at the market. She has been attending the market as a customer from when she was a child and always dreamed on one day being a vendor herself. Now, Jimmy, Simone, and their three children work their two acre homestead and come to Broken Arrow to reap the benefits each Saturday.
Their homestead has a little bit of everything from a kitchen garden, chickens, goats, flowers, and of course all the goodies they can produce from their farm such as Simone’s goat milk soaps and other body care products. For their garden, they only follow pesticide-free and natural growing practices to ensure the best quality of food for their family and yours despite the extra work that goes into it. Jimmy went on to mention that this year they are already doing better than last year because of plastic coverings, starting seeds indoors (“a true game changer”) and using cover crops. Additionally, Jimmy mentioned that it is difficult to understand where exactly they stand in production because the weather is so unpredictable that they have yet been able to try the same thing twice to see what exactly is working for them and what isn’t. Jimmy states it is strange to call himself a “farmer” but at the end of the day that is exactly what him and his family are- farmers. Despite the size of their operation, they all continuously work together to create a healthy happy home not just for themselves but for their livestock as well. New to this year, McCoy’s Meadow will be offering compost!
The goats are where Simone’s passion lies, and she has created a schedule to care for them side-by-side with her children. Simone stays at home with her two youngest children and homeschools them while tending to other farm chores while also making her body care products using the fresh goat milk from her farm. Their children are learning not only just the educational basics and about life on the farm, but a second language as well! Jimmy is always looking at motivating Simone to try new things with her soap and supporting her along the way knowing that she can be unstoppable when she puts herself to the task and undeniably successful. To say that this family is busy is an understatement.
At the market, you can normally find the family spread across a few vendor booths as they embrace the family-feel amongst the vendors and do their best to help others out as much as possible. Their oldest son has been seen assisting other vendor booths. The same goes for the rest of the family as they also chip in to cover other’s booths in times of need, talking amongst the others to work on future collaborations or supporting other small businesses by making purchases.
If you haven’t gotten a chance be sure to stop by and introduce yourself as you fall in love with this humble and outgoing family and their wonderful homegrown/handmade products.

PARAGON SAUCE & SPICE
Our business began in 1982. It started out of our interest in barbecuing & smoking meats. We decided to try & develop our own sauce. It became a personal challenge & a hobby. There were many attempts to formulate just the right flavor before we came up with our original sauce. The sauces from Kansas City & St. Louis always caught my attention. The goal was to develop a flavor profile that rivaled the best available. We would ask friends & neighbors to try our sauce & give us feedback 7 suggestions. Our original sauce because what is now called Muddy Waters Barbecue Sauce.
What began as a hobby evolved into a part time business. During the years 1982-2020, I worked full time for Baker Hughes in Engineering. During those years I continued the interest in barbecue sauces & now have 4 in the product offering. Friends, co-workers, church members & neighbors have continued to request the sauces.
We have success in the competition filed over those years. Many ribbons, & accolades have been received on local, state, regional, national & international levels. Most notable was winning the Best Sauce on the Planet award at the American Royal in Kansas City MO with the Fire Brick Barbecue Sauce.
Retirement has given us the opportunity to expand our business model to include seasonings & also smoked mixed nuts. Sharissa processes jams & jellies during the spring & summer fruit seasons. This is our first season at the Rose District Farmers Market & we are very excited for the opportunity to participate.
We recognize that the encouragement from friends & customers is most important & we continue to be very thankful for the support that we receive!
