Vendor Spotlight!
Circle T Cattle Company is a family-owned ranch located in Inola, OK. The ranch consists of 400 green grassy acres and is home to some of the most spoiled cattle around. They are currently in their second season of the Rose District Farmers Market and because of the support from Broken Arrow, they are flirting with idea of a store front here. Don’t worry, though! They plan on staying at the market for many more seasons to come!
Kirt Thacker, also known as the popsicle man, drove me all over the ranch as he explained the day-to-day details of the job and what it takes to get ready for the market. They have 80 head of cattle and calves are dropping left and right. Now, for most people when they think of cattle or cattle operations, they generally think of cruel and dark places which couldn’t be any further from Circle T Cattle Company. Thacker explained that they treat their cattle like royalty because there is no benefit to mistreating them. This is their livelihood and when the public becoming more aware of where their food was coming from and how their livestock was treated, Circle T has never had to change their operations. They have been raising cattle ethically long before it was ever popular.
During the summer months, the cattle will begin to shed their winter coats and thin out as they walk several miles day as what Thacker describes as “chasing grass.” The only time they are fed grain during the summer is when Thacker needs an accurate head count and to keep them docile. The cattle are rotated based on the needs of the ranch. While some will stay to produce more cattle, the rest are brought to market but only after aging for 21 days for optimal tenderness. While on this topic, Thacker explained how this was one of their biggest hurdles last year as many cattlemen struggled with getting appointments for processing due to big meat packers closing their operations and forcing everyone to overwhelm small local packers. This year, the Thacker’s have developed a partnership with Mayes County Processing where they are able to process their beef as needed for the market.
Kirt went on to say that he loves the RDFM because of the customers. Each week he gets to see returning and new customers and loves how they are becoming more in tune with where their food is coming from. The fellow vendors become friends and each week turns the market into this family-like event for everyone whether they are working or shopping. The rest of the family has decided to join in on the fun as well as they have begun to offer baked goods such as focaccia bread, cake balls, and blended oils.
Kirt & Jeanna Thacker said they would show each week rain or shine because the market coordinator is so cool, and yes, they really did say that. To add this, last year they named a calf after Nicole and Kirt says he’s not sure he was ready to take on the personality that came with the name as the calf is often walking down the feed trough rather than being anywhere near normal.

May 14th- National Police Week, 9 AM - 10:30 AM, Officers will be at the market with a squad car for kids to meet Broken Arrow's Finest and see the inside of their vehicles! They will also be passing out PD swag!
July- Buy Fresh BA, Through July, our vendors will be passing out tickets to for up to every $10 spent at the market for the chance to win three Farmers Market baskets filled with donations from our very own vendors! We will draw for the winners on the first Saturday of August to kick off National Farmers Market Week!
August 6th- National Farmers Market Week, Traveling Barnyard, Photo Booth, Performance by Daniel Jordan, and the drawing of Buy Fresh BA!
October 8th- National Fire Prevention Week, 9 AM-10:30 AM, Firefighters will be at the market with a firetruck for kids to meet Broken Arrow's Bravest and see the bells and whistles of the firetruck! They will also be passing out FD swag!
October 29th- Halloween at the Market, While supplies last, our vendors will be passing out Halloween candy to all the Trick-or-Treaters!
Throughout the season, the City of Broken Arrow will be rotating a booth for the various departments/divisions. We hope this gives the citizens a chance to ask questions or learn more about each department.

Recipe Corner
Creamy Chicken & Spinach Enchilladas
 Ingredients
- Non-stick cooking spray
- 1 cup plain non-fat Greek yogurt
- 1/4 cup all-purpose flour
- 2 tsp cumin
- 2 tsp garlic powder
- 3/4 cup 1% low-fat milk
- 2 (12.5 oz) cans chunk chicken breasts, drained & shredded
- 1 (12 oz) package frozen spinach
- 4 green onions, sliced
- 2 (4 oz) cans diced green chiles, drained
- 2 cups Monterey Jack cheese, divided
- 10 (7-inch) whole-wheat tortillas
Preparation
- Preheat oven to 400°F. Lightly coat a large casserole dish with cooking spray.
- In a small bowl, whisk together yogurt, flour, cumin, garlic powder & milk. Pour half of the sauce in the bottom of dish.
- In a large bowl, add chicken, spinach, onions, 1 can of chiles & 1 cup cheese. Mix well.
- Spoon chicken mixture into the center of the tortilla. Roll it up & place seam-side down in the casserole dish. Repeat for all tortillas.
- Top evenly with remaining sauce, cheese & can of chiles. Bake 25-30 minutes or until heated through.
