Vendor Spotlight
The name, "My Dad's Salsa" was created from the fact I have 4 children and one day they would be out marketing the product and they could say with true conviction, this is my dad's salsa.
It all started in the back yard of our home when we grew some tomatoes and jalapenos and found a simple recipe for salsa.
Created the mild salsa and figured if the kids could eat it, most anyone could. The recipe made about 6 pints. When that was gone they wanted me to make more. Friends came over, we served it, they liked it and soon someone said, you ought to sell this, I said, "I'm giving it to you and you want me to sell it to you".
From there it started, went to OSU in Stillwater, took the class that taught how to do a small business. Went to Louisiana State University for the Better Canning and Processing certification class, located a Tulsa Health Department Certified kitchen for "The Dad" to cook and process in and started selling in June of 2000.
The processing remains the same, the only thing that changes is the heat levels. What makes our salsa stand out is the chunkiness, (along with the great taste).

Here in the Recipe Corner, we would like to make it a little easier to cook through the seasons!
New to this year, we will be highlighting recipes straight from our very own vendors!
ONIE PROJECT- Fiesta Casserole
30 min. Serves 8
Ingredients:
- 2 cups instant brown rice
- Non-stick cooking spray
- 1 (10 oz) can mild enchilada sauce
- 1 (14.5 oz) can no-salt-added diced tomatoes, drained
- 1 cup frozen corn
- 1 (15 oz) can no-salt-added black beans, drained & rinsed
- 1/4 cup chopped fresh cilantro
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1 1/2 cups shredded fiesta blend cheese, divided
- Avocado optional
Directions:
1. Prepare rice according to package directions. Set aside.
2. Preheat oven to 375ºF. Lightly coat square glass baking dish with cooking spray.
3. In a large bowl, mix cooked rice, enchilada sauce, tomatoes, corn, beans, cilantro, cumin, chili powder & 1 cup cheese.
4. Spread mixture evenly in baking dish. Top with remaining cheese. Bake 15 minutes or until bubbly & cheese has melted.
5. Cut into squares & serve immediately.
