Our Story by Dawn Chesser, Co-Founder & President
Hi there! We are the Chesser family and this is our story of how we came to make these healthy, yummy snacks!
Our journey began on a cold December day back in 2013. My husband, Craig, and I found ourselves sitting in a small doctor’s office being told the words no one ever wants to hear - “you have cancer.” Later that month I underwent a very long surgery to remove my thyroid and affected lymph nodes - Merry Christmas to me (note the sarcasm)!
The two years following my diagnosis and surgery, I endured a seemingly endless schedule of doctors’ appointments, radiation treatments, body scans, and isolation before finally getting to hear the sweet words - “ALL CLEAR.” But I wasn't out of the woods yet...
Fast-forward to November of 2018, and it was time for the “big one” - the five-year milestone scan. I went through all of the rigorous preparation and isolation just as before and we again got to hear those wonderful words - “ALL CLEAR!” And while it was a huge relief to finally conquer cancer, we were still burdened with thousands of dollars in medical bills associated with my years of treatment. So, filled with a weird combination of both frustration and hope, I came up with a side (or Sixth Day) project to produce and sell the snacks that I had been making for our own family for years.
Using social media, I reached out to friends and family to share my personal mission. And within a few short weeks’ time we had earned enough money to pay the medical bills off IN FULL! But what we didn't expect was the demand for our snacks would keep coming (and increasing) even after the bills were paid. So, at the beginning of 2019, we formed our little family business - Sixth Day Snacks! And we now offer a full line of restaurant-style salsas in differing heats, uniquely flavored hummus, as well as sweetly satisfying granola bites and guilty pleasures like candied and pickled jalapenos!
Our mission here at Sixth Day Snacks is simple - to offer healthy, yummy snacks that everyone can enjoy! So, we invite you to give us a try - come taste and see how good life is!

Here in the Recipe Corner, we would like to make it a little easier to cook through the seasons!

Sixth Day Snacks - Tomatillo Chicken Enchilladas
Servings: (This fed 4 adults and 3 kids with 1 enchilada leftover)
Ingredients:
1-2-lb shredded chicken (I used leftover rotisserie chicken but when I don’t have rotisserie chicken, I will cook frozen chicken breasts on low heat in a crock pot for 6-8 hours with 1-inch chicken broth and a sprinkle of kosher salt & cumin) -1 block cream cheese (or use less if you want it less cheesy) -8-10 tortillas (flour, corn or even gluten-free) -1 jar Sixth Day Snacks salsa verde -1 small container sour cream -8-Oz shredded cheese, your choosing -1/2 cup diced onion (I used white) -1 avocado, sliced
Directions:
1. Preheat oven to 425-degrees. Spray a 9x13 dish with non-stock spray and set aside. 2. Place shredded chicken in a skillet over medium heat, add cream cheese and mix with chicken until melted and mixed well. 3. Once chicken/cream cheese mixture is ready, scoop into the tortillas, filling each one to your liking. Roll tortilla and place seam-side down in the baking dish. 4. Pour a jar of Sixth Day Snacks salsa verde into the skillet (you can use the same one the chicken-cream cheese mixture was in), add in sour cream and mix well until heated through. Pour on top of enchiladas, top with shredded cheese and diced onions! 5. Bake for 10-20 minutes or until cheese on top is melted and bubbly. Remove from oven and top with sliced avocados! 6. **If doing dairy-free, omit the cheeses and sour cream. I did a single serving and filled my enchilada with shredded chicken, rolled it up and placed it seam-side down in a greased bread loaf dish (it kept it from unrolling being a single). Then I heated some of our salsa verde in a separate skillet with a healthy dollop of vegan butter (I like the Country Crock sticks or spread from Walmart). Once that was melted and mixed together, I poured it on top and let it heat in the oven with the rest of the ‘ladas, but only for about 5 minutes or it will dry it out.
