Know What to Look for Before Burning
Don’t be the neighbor that burns down the neighborhood – use caution with outdoor fire.
Caution with outdoor fire and anything that can throw a spark is critical. We emphasize simple actions like checking fire danger for your area, checking the weather and wind conditions, properly disposing of smoking materials such as cigarettes and being extremely careful with machinery, mowers and farm equipment when working outdoors.

From the Field to the Freezer
If you've driven through Sampson County lately, you know corn season is in full swing! Maybe you’ve been lucky enough to get some fresh corn from a local farmer, you’re growing your own, or you’ve purchased some recently on sale. Whatever the case may be, this is a wonderful time to put up some corn for later in the year. Freezing fresh corn is a great way to store corn for the coming months. It takes a little time up front, but come January, you'll be glad it's there. To freeze corn, remove the husk and trim the ears, remove silks and wash. Blanch the corn-on-the cob for 7-9 minutes, cool promptly, drain and package it up. For more information on preserving corn, and any other summer produce, visit the National Center for Home Food Preservation (nchfp.uga.edu). This month's recipe puts that corn to delicious use, a Mexican Street Corn Salad that's fresh, a little smoky, and perfect for your Fourth of July table.
Mexican Street Corn Salad
Serves 4 people
Ingredients:
- 4 ears fresh corn, husked
- Extra-virgin olive oil, for brushing
- 1 ½ tablespoons mayo
- 1 garlic clove, minced
- Zest and juice of 1 lime
- 1/3 cup chopped scallions
- ¼ cup crumbled Cotija, or feta cheese
- ¼ cup finely chopped fresh cilantro
- ¼ teaspoon smoked paprika, or chili powder
- 1 jalapeno pepper, diced*
- ¼ teaspoon sea salt
Directions:
- Preheat a grill to medium-high heat. Brush the corn with olive oil and grill for 2 minutes per side, or until char marks form. Remove from grill and set aside.
- In a large bowl, combine the mayo, garlic, and lime zest and juice. Slice the kernels off the corn and add to the bowl along with the scallions. Stir to coat, then add the cheese, cilantro, smoked paprika, jalapeño, and salt. Season to taste and serve immediately or chill until ready to serve.
