Homemade Pesto
If you're looking for an affordable, but different sauce option for your weeknight meals, homemade pesto will become your new go-to! Homemade pesto sounds fancy, but it comes together in about five minutes with a food processor or blender. With a few smart swaps, it costs a fraction of what you'd pay at the store. Pine nuts, the traditional choice, can run $15 or more per pound. Cashews give you that same creamy, rich result for a lot less. Adding spinach alongside fresh basil stretches your herbs further without changing the flavor in any noticeable way, and it sneaks in an extra serving of greens. Drizzle it over pasta, spread it on sandwiches, stir it into scrambled eggs, or use it as a dip for fresh vegetables. However you use it, this is one of those recipes that makes eating well feel a lot more doable — and a lot less expensive.
Homemade Pesto
Ingredients:
Dressing:
- 1 ½ cups of spinach or greens
- 1 cup of fresh basil
- 2/3 cup of olive oil
- ¼ cup cashews (or pine nuts, or a mix)
- ¼ cup parmesan cheese
- 2 cloves of garlic
- Salt to taste
Directions:
- Add greens, basil, and garlic to a food processor.
- Add oil, nuts, cheese and salt.
- Blend until smooth.
