Mediterranean Meatballs
This month I’m sharing one of my go to recipes that has made it on my list of busy weeknight meals. These meatballs are from our Mediterranean Diet series we offer at the Extension office. There are four different flavor variations on the website, and you could use them in pasta, on a sandwich, or even in rice bowl. They are packed with plenty of protein and fiber, great for keeping you full and satisfied. Make a big batch and freeze half to use later. You can also pre-prep some of the ingredients. Find the variations, or more of our Mediterranean diet recipes at Medinsteadofmeds.com.
