Southwestern Chopped Chicken Salad
Ingredients:
- 6 cups chopped romaine lettuce
- 6 cups cubed cooked chicken
- 1 1/2 cups corn
- 1 1/2 cups black beans
- 1 1/2 cups tomatoes, chopped
- 1 avocado, diced
- 1/2 red onion, diced
- 3/4 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
- Handful chopped cilantro
Dressing:
- 1/2 cup plain Greek yogurt
- 3 tablespoons extra virgin olive oil
- 2 teaspoons honey
- 2 teaspoons apple cider vinegar
- 1 teaspoon minced garlic
- 2 tablespoons lime juice
- 1/2 jalapeño, finely diced
- 2 heaping teaspoons taco seasoning
- Salt, to taste and if needed
Instructions:
- Add all of the salad ingredients to a large bowl.
- Whisk the dressing ingredients together, except for the salt. Taste, then add salt to preference.
- Spoon dressing over salad, then toss to combine. Serve cold.

Reminders while at the market: Animals are not allowed, with the exception of service dogs. The market begins promptly at 2:30 p.m. and no early purchases are allowed. Some vendors offer credit card payments, but please bring cash for those who do not.
SNAP/EBT Program
Shoppers who participate in the Supplemental Nutrition Assistance Program (SNAP) can use their EBT cards at the City Market booth to purchase tokens, which can then be used to purchase eligible items from participating vendors.
