3–4 p.m.

South Lake Pediatrics will be at the Minnetonka Farmers Market this week hosting a Teddy Bear Clinic. Kids are invited to bring their favorite teddy bear or other stuffed animal for a special check-up with Dr. Tracy Hall from 3–4 p.m.

PoP Club members should stop by the information booth to get a $2 token to choose their own fresh, vendor grown produce and then visit the Teddy Bear Clinic. PoP Club is sponsored in part by South Lake Pediatrics.

Original Hockey Mom Brownies is truly a family business. Andrew Howard’s mom Patti started baking brownies for his Andover hockey team when he was just 14. Craft & Vine Picklery

New at the market this year, craft pickle producer Craft & Vine Picklery will be offering their original dill and hot habanero flavors for one more week. Andrew Hormann, a classically-trained chef wanted to create a pickle that he didn’t see available anywhere else. His pickles are hand crafted in small batches and cold packed in his special brine, resulting in a crisp pickle with a delicate flavor. They are great on burgers, sandwiches, in a Bloody Mary or simply straight out of the jar for a quick snack.

Ron Shimanski has been delighting market goers with his apples, pears and plums since 2011. With more than 16 varieties of apples he is sure to have one of your favorites. Availability of specific varieties will vary throughout the season and include Oriel, Red Free, Paula Red, Hazen, Chestnut, Crab, Sweet 16, State Fair, Zestar, Honeycrisp, Honey Gold, Ginger Gold, Cortland, McIntosh, Regent, Ronnel Red and Haralson.

apple cake

Easy-as-Pice Apple Cake

Reprinted from The New York Times

Serves 8

Ingredients:

  • 1 cup unbleached all-purpose flour, more as needed
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 2 ounces grams unsalted butter (1/2 stick), softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • 1 large egg
  • 2 cups diced apples (from about 2 apples)
  • ½ cup toasted pecans, chopped (optional)

Directions:

  1. Heat oven to 350 degrees. In a large bowl, whisk together flour, baking soda and salt.  
  2. In a mixer bowl fitted with the paddle attachment, cream butter, sugar, vanilla, cinnamon and nutmeg. Add the egg and mix until smooth.
  3. With the mixer on low, beat in dry ingredients until smooth (at this point the batter will be quite thick). Fold in the apples and nuts by hand.
  4. Spread batter evenly into a greased and floured 9-inch fluted tart or quiche pan with 1-inch sides. (Alternatively you can use a 9-inch cake pan with 1-inch sides.) Bake until cake is golden brown and a toothpick inserted in the center of the cake comes out clean, 40 to 45 minutes. Let cool 10 minutes before serving.
