Celebrate National Farmers Market Week Aug. 6–12
As demand for local food continues
to grow, so too have the opportunities for America’s farmers to market fresh
food directly to the consumer. According to statistics recently released by
United States Department of Agriculture (USDA), farmers markets and farm stands
account for roughly $2 billion of the $3 billion that Americans spend annually
on farm-direct products. This revenue, in turn, supports the livelihoods of
more than 165,000 mostly small and mid-sized farms.
The Minnetonka Farmers Market
The Minnetonka Farmers Market began in 2009, and currently hosts more
than 35 vendors selling a wide variety of products, including 100 percent grass-fed beef, honey, fresh baked
breads, organic jams, eggs, as well as fresh fruits and vegetables. This
year, the market added a variety of local artisans.
“We are excited to have expanded
activities and engagement opportunities for families in 2017,” says Amy Weiss,
Minnetonka Farmers Market Manager. With the launch of the Power of Produce (PoP)
program sponsored in part by South Lake Pediatrics, kids now have the
opportunity to taste vegetables and make their own shopping purchases. “In
addition, Hennepin County Library has created a kids corner at each market this season engaging kids in activities and reading. It has been a great community
partnership.”

Food Truck at the Market
Stanley’s Northeast Bar Room took to the streets with the addition
of a food truck, Stanley’s on
Wheels, in 2012. Find them serving Stanley’s well-known smoked BBQ
beef brisket sandwich along with several other favorites including; Beef
brisket nachos, BBQ pulled pork sandwich, roasted red pepper hummus veggie wrap
and rock slide brownie for dessert. Stanley’s on Wheels will bring a
little slice of Nordeast to the farmers market Aug. 8 and Sept. 5.

grown beets, blueberries, bok choy, broccoli, Brussel sprouts, cabbage,

Colleen’s
Greens
Collen Wolbeck
started Colleen's Greens
in 2015 after growing up on a farm and earning a degree in
horticulture. She was born to grow plants! Colleen specializes in growing microgreens,
tiny edible plants, packed with concentrated nutrients and intense flavors.
Although not certified organic, Colleen uses only organic practices and non-GMO
organically sourced seed. The most important part of her job is teaching her
customers, especially kids, about eating fresh foods and adding vegetables to their diet.

 Recipe of the Week
Farmers Market Breakfast Tacos
Reprinted from Layers of Happiness
Makes 4 tacos
Ingredients
For
the balsamic glaze:
-
1
cup good balsamic vinegar
- 1/4
cup honey (Bee Happy Honey)
For
the tacos:
- 4
corn tortillas
- 1/2
cup grated extra-sharp white cheddar cheese
- 4
slices bacon
-
2
Tablespoons maple syrup
-
4
large eggs (Dale’s Delicious Eggs)
-
4
Tablespoons chopped fresh cilantro, divided
- 4
green onions, sliced
-
Balsamic
glaze
-
Micro-greens
(Colleen’s Greens)
Directions
Make
balsamic reduction:
- Stir
balsamic vinegar and honey together in a small saucepan and place over
medium-high heat. Bring to a boil, reduce heat to low, and simmer for 10-15
minutes, until the vinegar can coat a spoon.

Set
the balsamic reduction aside to cool. The mixture will thicken as it cools. It
should be thick and stick, but not so thick, that it’s hard to stir. If it’s
too thick, add a bit more vinegar, place back over heat and stir until
incorporated. If not thick enough, put back on burner until it thickens a bit
more.
For
the tacos:

Brush
large nonstick skillet with olive or vegetable oil. Char tortillas over gas
flame or directly on electric burner until blackened in spots, turning with
tongs. Arrange tortillas in single layer and sprinkle each tortilla with 2 tablespoons
grated cheese and set aside.

Cook
bacon in a microwave or skillet until it’s three-fourths of the way done, brush
with maple syrup, and finish cooking. Chopping into bite size pieces, set
aside.

Whisk
eggs and 2 tablespoons cilantro in medium bowl. Season with salt and pepper.
- Add
green onions to a skillet and sauté 2 minutes. Add egg mixture and stir until
very softly set, about 1 minute. Remove egg mixture from heat.

Divide
egg mixture among tortillas, top with micro-greens, and sprinkle with bacon
bits and remaining cilantro. Fold each tortilla in half and drizzle with
balsamic reduction.

Live Music
Four Legg Fish
Since 2012 the Americana
group Four Legg Fish
has been playing music around Minnesota. They have had the pleasure of sharing
the stage with national acts like Goodnight, Texas, and regional favorites
Jillian Rae, Roe Family Singers and Choo Choo Bob. They also host a monthly
Americana night at the Acadia Cafe in Minneapolis. At their current shows, they
play songs off their debut LP "Northwest Passage" along with slew of
other original and traditional tunes.

Hennepin County Master Gardeners
Ask a Hennepin County Master Gardener all the garden questions
you’ve always wanted answered. Bring pictures of anything puzzling you in your
garden. The Master Gardeners
will be available throughout the 2017 season for attendees to ask questions as
your garden transitions with the seasons.

“Check out” the
Hennepin County Library booth all season long. Librarians will be on hand with
new activities for kids and books available for checking out, library card

The Landing Shop (previously the Mills Landing
Gift Shoppe) offers handmade items crafted by Minnetonka residents 55 and
older. The items available will vary each week but may include wooden toys,
baby items, doll clothes, home décor, kitchen items and greeting cards.
