Earlier this month, Hennepin County Commissioners repealed the vaccine attestation requirement for volunteers. This means that volunteers are no longer required to provide vaccine attestation to continue volunteering with the county. This change was made by county administration based on feedback from volunteers. Thank you to those who have already submitted their attestation. No further action is required.

The online Stop Food Waste Challenge is coming up! The challenge runs August 1 to 31, and we are recruiting participants now. We have three volunteer opportunities for MRCs to promote the challenge and engage people they know in taking the challenge. Details about each of these opportunities is included below.
DIY tabling on food waste prevention for the Stop Food Waste Challenge (get 2 bonus hours!)
This volunteer opportunity involves putting together materials on date labeling and food storage and tabling at the event of your choice between now and August 10 to educate residents about food waste prevention and promote the Stop Food Waste Challenge. Suggestions for events include neighborhood National Night Out parties, farmers markets, faith organization events and other community events.
How to fulfill this volunteer opportunity
- Schedule attending the event of your choice
- Prepare your tabling kit: Print or request printed materials about date labeling and food storage and put together display items. See below for more information.
- Attend and table at the event. Remember to submit your hours including preparation time, tabling time, plus two free bonus hours!
You do not need to notify us in advance if you choose to do this volunteer opportunity.
How to prepare your tabling kit
- Plan and gather display items. Decide what food waste prevention education topics you want to focus on and prepare your display by doing one or more of the following:

Understanding date labels: Gather shelf-stable food items or empty fridge/freezer packaging that show different types of date labeling.

Organizing your fridge to prevent food waste: Create an “eat first” basket by affixing an “eat me first (PDF)” label to a container and putting a few packaging examples inside.

Food storage tips and tricks: Bring produce prepped to show storage tip examples. For example, sliced veggies or herbs in a jar of water.
- Print a copy of each relevant resource below to use with your display or as a reference (or request two weeks in advance to have them printed and mailed to you)

Stop Food Waste Challenge team captain and participant recruiter (get 2 bonus hours!)
This volunteer opportunity can be done entirely online and will take place in two phases. First, create a team and recruit team members. Then, engage your team throughout the Stop Food Waste Challenge, which runs from August 1 to 31.
How to be a Stop Food Waste Challenge team captain
- Sign up for the challenge at hennepinfoodwaste.ecochallenge.org (or if you’ve already participated in a challenge, log in and sign up for the 2022 Stop Food Waste Challenge).
- Create a profile then choose to start your own new team.
- Recruit team members to join your team, including friends, family, congregation, coworkers, or others. You can do recruitment online or in-person.
- Participate during the challenge and continue to lead and engage your team. Share thoughts, post updates, ask questions, challenge team members to take on actions, and help troubleshoot and keep them motivated.

Track and submit your hours, including time spent recruiting and engaging team members plus two free bonus hours!

Post flyers for the Stop Food Waste Challenge
Print or request flyers be mailed to you and post them at your local library, coffee shop, community center or other local hub that has a community poster board! Track and submit the hours you spend doing this.
