Maricopa County Environmental Services provides essential, regional environmental services seeking to prevent and remove environmental health risks. The Department’s Environmental Health Specialists and Field Technicians are in the community every day making sure that among other things, food in all the eating and drinking establishments in the County is protected from contamination, that water supplies throughout the County are safe to drink, and that vector borne health illnesses and risks are minimized. Before you Remodel

Review the requirements to ensure your establishment is in compliance

Remodeling Restaurant

So, you’re thinking about remodeling or modifying your food establishment. Here is some information to help you determine if you need to go through a plan review process.  The plan review process evaluates the proposed changes to your establishment to ensure they meet requirements and avoid costly changes.

Per the 2017 U.S. Food & Drug Administration (FDA) Food Code, the remodeling of a food establishment may require an application submittal to the Department for review and pre-approval to ensure compliance with the Food Code.

The Department requires an application submittal for the following:

  • Addition of outdoor food operations (e.g., grills, bars, etc.)
  • Addition/modification of plumbing fixtures, appliances, and appurtenances, including sinks, dishwashers, water supply connections, backflow preventers, reverse osmosis systems, ice machines, water heaters, grease traps, etc.
  • Installation of new equipment that is connected to a water supply line
    • This does not apply to replacing old equipment with new equipment of the same type and connecting to the existing water supply line with proper backflow prevention installed.
  • Addition/replacement of walk-in refrigerator/freezer
  • Addition/modification of a ventilation hood
  • Damage to the establishment caused by fire or water

The Department may require an application submittal for the following:

  • Addition of specialty or custom equipment not certified/classified as NSF/ANSI
  • Addition of roll-up doors or other openings to the exterior­­
Food Inspector (2)

Before making changes, please ask your inspector or supervisor for further guidance. Please be aware that all modifications must meet current codes, laws, and regulations.  Please refer to our Construction Guide for detailed information.
