One of the earliest chemical engineers is Norbert Rillieux. His pioneering invention of the multiple-effect evaporator revolutionized the sugar industry.
Refining sugar had been an intensive process performed by slaves throughout the South. The manual process was slow and a considerable amount of the molten mixture was lost in processing. Patented in 1843, Rillieux's system addressed both the frequent and dangerous spillage from transfer and uneven heating. His machine successfully evaporated moisture from cane juice to produce a whiter, more refined sugar crystal. As production escalated, worker safety increased. The price of sugar fell and it became a household item around the globe. At age of 75, Rillieux adapted system to extract sugar from sugar beets.
