"Loso na madesu": Congolese rice and beans
This week’s recipe is from Families for Life community champion, Bakadila Minsende.
Serves 4 portions
Ingredients
- 250g dried red kidney beans, soaked overnight and cooked in water for 45 mins to 1 hour until soft or 2 tins of red kidney beans, drained and rinsed
- ½ small red onion, sliced thinly
- ¼ green bell pepper, sliced thinly
- 1 clove of garlic, finely chopped or minced
- 1 tbsp oil
- 1 tbsp tomato puree
- 1 tsp ground nutmeg
- ¼ tsp salt
- 3 bay leaves
- 3 plantains (or 4 green bananas)
- 2 cups rice, rinsed
-
Method
- Put the oil in a medium pan and cook the onions on a low heat until translucent. Add the garlic and green pepper and keep stirring for another minute or two.
- Add the nutmeg, 3 tbsp water and tomato puree to the pan with the onion and pepper. Gently cook for five minutes.
- Put the drained beans, salt and bay leaves in the pan and stir to mix. Cover the pot and continue to cook on a low heat for 30 minutes, stirring occasionally. Add water if it is at risk of burning on the bottom.
- Meanwhile, boil the plantains, in their skins, in a pan of water. Cook until the skins start to split, about 15 minutes, then remove from the water and let cool. When cool enough to handle, remove the skins and slice into bite-sized pieces.
- Put the rinsed rice in a medium pot with a well fitted lid. Cover the rice with 4 cups of water. Bring the water to a rapid boil. Turn the heat down to its lowest setting and put the lid on the pan. Allow the rice to cook slowly until all the water is absorbed, about 16 minutes. Do not uncover during cooking time. Cover the pan with a tea towel and let it sit for 5 minutes or until ready to serve. When ready, remove the lid and fluff up the rice with a fork.
- Serve the beans over the rice with the plantains on top.
