 There is nothing like hand-picking your fresh locally grown produce to create vibrant home cooked meals.
Here in the Recipe Corner, we would like to make it a little easier to cook through the seasons!
ONIE PROJECT-
Servings: 8
Time: 45 minutes
INGREDIENTS
3 cups chopped fresh or frozen rhubarb 2 cups sliced fresh or frozen strawberries 1/4 cup sugar 2 Tbsp cornstarch 1 tsp vanilla extract 1 cup rolled oats 1/2 cup all-purpose flour 1/4 cup brown sugar 1/4 tsp salt 2 Tbsp room temperature unsalted butter 2 Tbsp vegetable oil
INSTRUCTIONS
1. Preheat oven to 350°F. In a large bowl, add rhubarb, strawberries, sugar, cornstarch, and vanilla. Stir to combine. Transfer to a medium baking dish.
2. In a medium bowl, add oats, flour, brown sugar, salt, butter, and oil. Stir to form a crumble topping. Sprinkle topping over fruit.
3.Bake for 30-40 minutes until fruit is bubbly around the edges and topping is browned. Let cool 10 minutes before serving.
TIPS
Serve topped with non-fat vanilla Greek yogurt!
