Communicating Supply Chain Disruptions
No Kid Hungry is sharing new resources including:
Tips for Navigating Supply Chain Disruptions. Within this resource, are sample materials that you at the school/district level can use to communicate with families and the broader school community (i.e. administrators, teachers, students) about supply chain disruptions affecting school meals. They can be used as is or customized to best fit the needs of a particular school or district. It includes a menu note, a letter/email and social media posts, available in both English and Spanish.
We understand the nationwide labor and supply chain disruptions are affecting your school. Please reach out to our office at dpicnfd@nd.gov with any questions, comments or concerns.
School districts that are collecting the meal income applications (Application for Educational Benefits) this year are required to conduct verification.
Keep in mind:

Verification begins on October 1. On that date you should count up the qualifying applications that you have received this year. Do not include any applications that were denied/over income.
- Verify 3% of the qualifying applications. To find out how many applications that is, multiply the number of qualifying applications by .03 to get the number of applications you must verify. Any fraction needs to be rounded up, so if you get .75 applications, you must round the number up and verify one application.
- The verification process consists of contacting the household by letter requesting the documents needed for verification of the income listed on the application. A due date of ten days must be included. If the household does not comply by the due date, at least one follow up contact must be made with the household to obtain the documentation.
- The verification process ends on November 15th. If the household has not responded by then, the household is then notified that the benefits will be terminated in 10 days.
- A report of the verification process needs to be filed in ND Foods by December 15th. Even if no verification was conducted, a verification report still needs to be filed.

National School Lunch Week 2021
October 11-15, 2021
October is here! NSLW is a nationally celebrated week to promote school lunch, and all that YOU do to provide delicious, nutritious (and reimbursable) meals & friendly smiles to the students you serve!
The School Nutrition Association (SNA) provides tools to help increase participation, engage and excite students and staff, educate parents on school meals, connect with school administration and teachers as well as the potential for media coverage (if desired!) The SNA toolkit has coloring pages and activity sheets for you to print and have available for students – you can find it here: Toolkit & Handouts (schoolnutrition.org)
If your school does something fun to celebrate, please share pictures or stories with us, as we would love to see/hear about it! You can also share on the “North Dakota Kitchen Nutritional Staff” Facebook Group page!

LOOKING TO USE UP THE APPLE HARVEST WITH AN
APPLE CRUNCH??
We have just learned that Professional standards training requirements will not apply when school districts are operating the Seamless Summer Option (SSO) program during School Year 2021-22. While training is not required for SSO sponsors, the annual civil rights training is still required. A copy of the 2021-22 Civil Rights training is available on our website under ‘Civil Rights. School nutrition professionals are encouraged to continue learning and updating their programs with the new knowledge and skills. Any training accomplished this year will credit toward next year’s annual training requirements.

RECIPE CORNER
Zesty Pizza Subs - 10 Servings
|
This recipe comes from Northern Pulse Growers; “The Power of Pulses” recipe book
Ingredients
1 lb. lean ground beef
1/3 c. dry lentils, cooked to package directions (approx. 1 c. cooked)
1 Tbsp. Italian seasoning
1/2 tsp. pepper
1.5 - 15 oz. cans or bottles pizza sauce
1 ¼ c. shredded mozzarella cheese
10 - 6” submarine buns
Directions
Brown the ground beef, set aside. Boil lentils until tender, approximately 25 to 30 minutes, drain. In a large cooking pot, combine ground beef, cooked lentils, Italian seasoning, pepper and pizza sauce, heat through on medium heat or warm in 350 F oven. Serve on a whole wheat sub, top with 1 ½ tablespoons of cheese.
Makes 10 servings.
