Healthy Futures Starting in the Kitchen-Training '201'
The 4 week 16 hours HFSK training '201' for cooks and administrators was a great success. The participants got an opportunity to learn hands-on in the kitchen about the healthy kid friendly recipes. They also learned about basic nutrition, CACFP guidelines, money saving strategies, and spices from different cultures used in cooking. The training culminated on February 7, 2014 with a 'CHOP CHALLNEGE' cooking contest where participants got an opportunity to come up with quick, creative, nutritionally rich, and colorful recipes that were kid friendly. All the recipes were judged by CPCC culinary chefs and the prizes were given based on appearence, set up, nutrition value, and creativity. Healthy Snack Ideas
Because young children have small stomachs and usually can’t eat much at mealtimes, it’s important for them to have several small snacks throughout the day. These snacks should satisfy the children’s hunger, but not spoil their next meal.
- Many children prefer crunchy, colorful vegetables such as raw carrots, celery, broccoli, or cauliflower cut up and chilled.
- Children enjoy many fresh fruits. provide small servings of bananas, peaches, and apples. If you serve grapes, cut them into small pieces so the child won't choke.
- Frozen fruit juice bars, ice milk, or low fat frozen yogurt. Some children like cottage cheese.

Some children might not like foods mixed together. They might not like a fresh fruits mixed with yogurt, but they will probably eat these food when not mixed together.
- Remember to serve 1% milk instead of whole milk to children older than 2 years of age.
