Ethiopian
Cuisine is Strong in Washington. Why are Some Changing a Good Thing?
Mama said knock you out: Etete’s Tiwaltengus Shenegelgn with chef Christopher Roberson (Washington Post)
You might wonder why anyone would feel the need to refine one of the world’s most singular cuisines, a spicy and essentially sweet-free set of dishes that are consumed with your hands, the tactile experience as important as the gustatory one. Chefs and restaurateurs have their motivations: they might be threatened by creeping gentrification. They may feel the need to raise the price of what some consider “cheap” immigrant food to cover expenses. Or they may just want to see the food evolve, as part of the creative process that pushes all cuisines forward, whether Spanish, Chinese or Japanese.
Whatever the reason, anyone who wishes to adapt Ethiopian food for a modern diner must confront the same problem: dishes such as red-lentil wat and split-yellow-pea alicha are loose and stewy, their wet ingredients hard to corral or, worse, potentially corrosive to inventions such as Ethiopian lasagne with injera.

UI faculty help African entrepreneurs build
businesses in their home countries
Two University of Iowa faculty members recently spent time in Ethiopia and Kenya helping entrepreneurs who participated in last year’s Young African Leadership Initiative (YALI) develop their businesses
Lulayn Awgichew
quickly caught Dimy Doresca’s attention when she participated in the Young
African Leadership Initiative (YALI) last summer at the University of Iowa. “She
had specific goals that she wanted to achieve for her business in Ethiopia and
knew what she wanted to learn during her fellowship,” says Doresca, director of
the UI’s Institute for International Business in the John Pappajohn
Entrepreneurial Center (JPEC) and YALI coordinator. “It gave her the motivation
she needed, a wake-up call to see that her business had potential.”
As a new group of
fellows arrives on campus this week to participate in the 2017 YALI program,
some UI faculty are still working with last year’s participants. Doresca and
Patrick Johanns, a member of the management sciences faculty in the Tippie
College of Business and JPEC, each received one of just 50 follow-up grants the
U.S. State Department awarded for U.S. faculty to visit YALI alumni in their
home countries and provide hands-on entrepreneurial support.
