Recipe: On-the-Go Egg Muffins

presented by Maricopa County's Onsite Health Coach, Heather Lehman

We are all in a hurry in the mornings.  Reheat these egg muffins for a quick, protein-filled breakfast!

 On-the-Go Egg Muffins

  • One dozen eggs - 9 egg whites and 3 whole eggs
  • 1/4 cup of onion (to taste)
  • 1/2 cup of another vegetable (bell pepper, asparagus, spinach, etc)
  • 1/2 cup of lean protein (ham, turkey, chicken sausage, vegetarian "meats")
  • Pepper and spice to taste
Mix all ingredients together.  Place foil baking cups inside of muffin tin.  Lightly use a non-stick spray on each baking cup. Using a 3/4 measuring cup, fill each baking cup in the tin. Bake at 350 degrees for approximately 25 minutes.
After cooled, place muffins in a storage bag in the refrigerator.  Warm them up in the toaster oven for a crispier top or microwave (don't forget to remove the foil!)
Depending on the type of protein added, muffins are 50-70 calories each with 5- grams of protein. Two muffins is a pretty good servings size for most. Change up the vegetables, proteins and spices to add variety. Spend a little time in the kitchen one day, you will have a week's worth of healthy breakfasts!
Heather is available for personalized, 1:1 sessions. Make an appointment with your Cigna Onsite Health Coach today!

Congratulations to a Weight Loss Warrior!

Congratulations to Juvenile Probation Officer Lisa Garcia for sticking to her New Year's Resolution and losing 52.4 pounds as of March 27, 2012!
Like so many people, Lisa made a New Year's Resolution to lose weight. She and her co-workers started a Weight Weatchers-like club. On Tuesday's the group weighed in, compared their weight loss plans, and supported each other in getting healthy. They also had to put a dollar in a jar whenever they gained weight. The incentive was that whoever lost the most weight after 12 weeks would win all of the money in the jar.
The group also started keeping food journals to document what they were eating and to keep track of the calories consumed. At the beginning of the program Lisa wouldn’t tell anyone but the leader of the group her weight.
Lisa put herself on a 1,000 to 1,200 calorie diet, started hiking on the weekends, and walking the parking garage at work at least once a day. She changed the eating habits of her household; as a result her husband has also lost weight. She has tried every other diet plan imaginable, but this group effort has truly worked for her.
Congratulations Lisa!
